A stop-over in Beppu Spa City, in southern Japan, where Sarah tries her hand at mass steam cooking. The steam is generated by some 3,000 onsens - hot springs that are still active.

Everyone brings their own basket, full of food, and uses the heat from the springs to cook it. Our chef sets out to explore the hinterlands, in search of shitake, one of the most popular mushrooms in Japan. Alongside a couple of mushroom growers from the region, Sarah prepares a tasty dish based on shiitake, soy sauce and sake, served with dried fish.
 
She then attends a wild boar hunt. Boar is abundant in the neighbouring forests. At dinner, Youichi Kodama introduces her to a daring combination of wild boar and fish, in an original game soup.
 
Finally, Sarah goes to the Yamadas’ inn, where they prepare her a real breakfast - with some unexpected ingredients - and introduce her to the art of the Japanese omelette.
