At Shaoxing market, Sarah Wiener discovers that tofu comes in many different forms. The soy-based foodstuff can be eaten hot or cold, sweet or savoury, and in the form of strips, pasta, leaves or crackers. There is even what is referred to as “smelly” tofu.

Sarah visits the bamboo groves in the district of Anji, in the provice of Zheijiang, where she discovers the taste of fresh bamboo shoots. She goes to a small tofu processing plant, where she attempts to grind soy, an exhausting task that is always carried out manually.
 
Here, Sarah tastes marinated pork, served with spring rolls and sautéed, fermented tofu. Back in Shaoxing, the chef Mr. Zhu teaches her how to make a recipe of pork with tofu leaves and condensed milk.
