La Couvertoirade is a magnificent village on the Larzac plateau in the Aveyron department. 

800 years ago, soldier monks from the Knights Templar order built a fortress on the local rock, protecting pilgrims, not far from the roads leading to the Mediterranean, from where crusaders set out to the Holy Lands. The rocky peak proved to be an excellent lookout point, and also benefitted from being the only place on this particularly arid plateau to have a natural water reserve. The ‘gift of water’ was offered to passing travellers by the villagers, secure behind their protective ramparts.
